The Duck Rillettes is a traditional French South west version of the well known Le Mans Rillettes. The duck meat is seasoned and slow cooked to perfection using the traditional confit method. The tender meat is then raked and potted in a jar or can along with its juices to give a delicious unctuous paste once chilled. Perfect on bread or crackers with a cornichon.
